RECIPE: Arroz a la Cubana with Vegan Egg & Platanos

INGREDIENTS – vegan egg

INGREDIENTS – prepare ahead of time

  • 1 medium red potato, diced and boiled until tender
  • 1/2 c frozen peas, thawed in hot water and drained
  • 1 c brown rice, cooked
  • 1 plantain, (plantains), peeled and sautéed until tender in a small amount of oil, until browned on both sides

INGREDIENTS – veggie meat medley

  • 1 tsp olive oil
  • 4 cloves garlic, finely minced or crushed
  • 1 small onion, diced
  • 1/2 pkg LightLife Smart Ground original crumbles
  • 1/4 c raisins
  • few sprigs of cilantro on finished medley
